The Swiss Food, Cheese and Raclette

 

Winters are the time to curl up and munch on cheesy food that keep you warm. There are many foods, specifically enjoyed during this season that can help fight the cold and keep up the fun.

 

Raclette is an excellent choice for a social meal and is proven to be a popular winter time treat. The raclette is a great meal with friends and perhaps one of the most iconic foods that people relate to Switzerland and the holiday season. Cooking together over an open flame inspires conversation, if not also warmth and fellowship. It is a cultural land mark with a table top appliance, a dining experience and a great time. The major ingredient of the traditional raclette is cheese, a nutritious food made from unpasteurized raw cow’s milk. Around 4000 years ago people have started to breed animals and process their milk. That's when the cheese was born.

 

The raclette is a Swiss cheesy dish that originated centuries ago from the mountainous Swiss canton of Valais, a French speaking region in the Swiss Alps. Raclette has accounts in writing that mentions its history to be earlier than 1291. Switzerland has a mild climate where the mountain peaks in the Swiss Alps are buried under eternal ice and snow. Swiss cuisine is hence conducive to the cold weather where people gather around the fire place with their afternoon snack platter.

 

 

 

  

 

 

 

Winter is when we need this super-food the most.

 

 

 

 

On a raclette party, while the potatoes roasted in the fire, a big piece of cheese is put close to the fire. It takes approximately 2 minutes to melt to a creamy consistency and 3 minutes for a crispier top. Once it started melting the cheese is taken away and is scraped off onto the baked potatoes. This was not only filling and nourishing but also delicious. In French ‘to scrape’ translates to ‘racler’ and this is where the term Raclette comes from. The melted cheese can be served over boiled potatoes and sliced cold meats seasoned with freshly ground pepper and paprika. A Swiss white wine or a light fruity red wine such as Beaujolais is best to accompany this dish.

 

Once people know raclette, they like it. That has a lot to do with sociability. When you are making raclette, you are not just cooking alongside your tablemates, but you are also eating at a slower pace more conducive to conversation. It is so much fun.

 

Raclette is also a little more complex than fondue. While the latter takes only a bowl and a flame, raclette requires equipment. In 2015, Edgar Villongco a New York City phenom opened his restaurant with a more theatrical style. Rather than having diners cook their own cheese on a grill, servers stop at each table with a wheel of cheese mounted near a flame and scrape a huge, oozing pile of cheese straight over a dish of accompaniments.

 

Today, only few houses have an open fire place, so to simulate the process we now have raclette melter that hold a block of cheese under a heating element. Another variety is a raclette grill, which allows melting individual portions of cheese and offers a grill top to serve grilled vegetables, meat, chicken, or fish with the cheese.

There are round about 450 cheese siblings to raclette and fondue in the Swiss cuisine to enjoy a beautiful winter culinary experience.

It contains a host of nutrients like calcium, protein, phosphorus, zinc, vitamin A and vitamin B12. The high-quality milk protein is easy to digest and provides the essential building blocks for strong muscles. Overall it is a magical and delicious ingredient that keeps the health in prime and the skin glowing.

Each area of the country has its own types of cheese, the diversity of products created from one single base ingredient – good Swiss milk – is quite astonishing.
